    SAN MARCOS: 2012 Guest Artist Workshop: Terry Buck from Buck Pottery. The 2012 Texas Clay Continuum will be hosted at the Eye of the Dog Art Center. Rotate through four exciting hands-on workshops in four days. Explore sculpture with Billy Ray Mangham; alternative kilns and firing techniques with Randy Brodnax; hand building with guest artist Terry Buck; and throwing basics and surface enhancements with Bridget Hauser.     FREDERICKSBURG: First Friday Art Walk. Eleven wonderful art galleries open their doors at 10 am with a full day of events.     Cowboy Steak with Coffee and Chili Rub

    Steak
    INGREDIENTS

    1 1/2 tsp ancho chili powder

    1 1/2 tsp fine ground espresso coffee

    1/2 tsp brown sugar

    1/4 tsp dry mustard

    1/4 tsp ground coriander

    1/4 tsp salt

    1/4 tsp fresh ground pepper

    1 1/4 lb shoulder center steak or top sirloin, 1 1/4 inch thick

    DIRECTIONS
    Spray a large nonstick skillet with cooking spray and preheat over med-high heat.  In a small bowl combine all ingredients for the rub and coat each steak well on both sides.  Cook steak on skillet for 14 minutes, turning once for medium to medium rare.  Allow steaks to sit for 5 minutes before slicing.
